Ambrosia - 35.0cl
Ambrosia is one of Boerenerf's unconventional blends: a mead 'diluted' with 10% lambic and macerated with the famous Schaarbeek sour cherries. The deep ruby-red liquid, without a head, has a slight purple tint and looks very much like a full-bodied red wine. The aroma consists of aged dark honey, concentrated sweet cherry juice, a hint of wood from the cherry pits, and subtle lambic notes. When warmed, a faint 'sweaty' smell emerges. There are also hints of pomegranate, cuberdons, wine gums, honey caramel, and a touch of fresh varnish.
The taste starts full, sweet, and fruity, like reduced sweet cherry juice, even though sour cherries were used. The mead's sweetness enhances the fruit and gives it a rich flavor. There are also light notes of lemon, red apple, blue plum, and pomegranate. The body is non-carbonated, vinous, and almost oily, with deep, aged honey that comes through retronasally. Cherry pit tannins and a subtle acidity from both the lambic and the fruit lead to a drier finish, but the lush honey sweetness remains present. A warm glow of red wine-like alcohol ties all the flavors together.
